  • 8 small corn tortillas
  • 1 cup shredded red cabbage
  • 1/2 cup pickled red onions
  • 1/4 cup fresh cilantro leaves
  • 1 jalapeño thinly sliced (optional)
  • Lime wedges for serving

Instructions
 

  • Prepare the cauliflower: Preheat your oven to 425°F (220°C). Toss cauliflower florets with olive oil, turmeric, smoked paprika, cumin, cayenne, salt, and black pepper. Spread on a baking sheet and roast for 20-25 minutes, flipping halfway through.
  • Make the crema: Blend 1 ripe avocado, juice of 1 lime, 1/4 cup unsweetened coconut yogurt, 1 minced garlic clove, and salt until smooth. Adjust lime juice to taste.
  • Warm the tortillas: Heat each tortilla in a dry skillet over medium heat for 30 seconds on each side. Stack and wrap them in a clean towel to keep warm.
  • Assemble the tacos: Layer each tortilla with shredded cabbage, roasted cauliflower, avocado crema, pickled onions, cilantro, and jalapeño slices. Serve with lime wedges.
