Ingredients
  

  • 1 lb ground beef 80% lean preferred
  • 4 cups coleslaw mix cabbage and carrots
  • 1 tablespoon sesame oil
  • 1 green onion thinly sliced (for garnish)
  • 1 teaspoon sesame seeds optional for garnish
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon fresh ginger grated
  • 2 teaspoons honey or maple syrup
  • 1 teaspoon garlic minced
  • 1 teaspoon sesame oil
  • ½ teaspoon sriracha or chili garlic sauce optional

Instructions
 

  • In a small bowl, whisk together soy sauce, rice vinegar, ginger, honey, garlic, sesame oil, and sriracha. Set aside for later.
  • Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it into crumbles with a wooden spoon. Drain any excess fat and set aside.
  • Add sesame oil to the skillet and heat for a few seconds. Add the coleslaw mix and stir-fry for 3–4 minutes until slightly softened but still crisp.
  • Push the coleslaw to one side of the skillet and return the ground beef to the other side. Pour the sesame ginger sauce over the beef and slaw, then toss until evenly coated and heated through.
  • Transfer to a serving dish or individual bowls. Garnish with sliced green onions and sesame seeds, then serve warm.

Notes

This dish can be served as-is for a low-carb option or paired with jasmine rice or noodles for a more filling meal. Adjust the spice level by increasing or omitting the sriracha.
